Warm Pumpkin Salad Recipe
Recipe : Warm Pumpkin Salad
Ingredients :
1 tbsp sesame seeds
2 tsp olive oil
1 small onion, finely sliced
1 medium fennel bulb, sliced finely
500g peeled pumpkin, preferably butternut, cut into
6mm (1/4 inch) slices
1/4 cup orange juice
2 tsp lemon juice
2 tsp honey
1 tsp sesame oil
2 tsp finely grated orange rind
2 tbsp chopped fresh chives
Method :
Toast
sesame seeds in a frying pan until golden (take care not to burn).
Remove from heat and set aside. Heat olive oil in pan, add onion and
fennel, cover and cook over low heat 3-4 minutes. Add pumpkin and
continue cooking, turning gently until just tender. Transfer to a
shallow dish.
Combine
orange and lemon juices, honey, sesame oil and orange rind. Pour
over pumpkin and sprinkle with chives.
Fat per serve : 5 grams
