Recipe : Silver and Jade Salad
Ingredients :
2 cooked chicken breasts, chilled
125g broccoli florets
125g mangetout
250g cooked plain fettuccine
250g cooked spinach fettuccine
1 small green pepper, seeded and finely sliced
4 spring onions, cut into 2.5 cm pieces
1 recipe Ginger and Mustard Dressing
2 tsp toasted sesame seeds
Method :
Finely slice the cooked chicken
breasts. Blanch the broccoli and mangetout:
Two thirds fill a saucepan with water and bring to a rapid boil. Meanwhile, prepare a large bowl of
iced water. When the water boils, plunge in
the broccoli and mangetout for 1 minute. Quickly drain the vegetables and
immediately plunge them into the bowl of iced water. Drain once more.
Microwave method: Place all the
vegetables on a flat, microwave dish and microwave on 'high' for 2
minutes. Cool immediately, as above. Combine the two kinds of cooked
fettuccine. Arrange on a flat serving dish. Arrange the blanched vegetables,
capsicum and sliced spring onion over the pasta. Top with the sliced chicken
breast. Just before serving, spoon over
the Ginger and Mustard Dressing and sprinkle with toasted sesame
seeds. The white and green pastas and crisp,
bright green mangetout combine with the other ingredients to make a dish
that features color, texture and flavour.
