Potato Salad with Basil Yoghurt Dressing Recipe
Recipe : Potato Salad with Basil Yoghurt Dressing
Ingredients :
500g new (cocktail) potatoes
2 tbsp lemon juice
200g natural low-fat yoghurt
1 clove garlic, crushed
1 cup chopped fresh basil
1/2 cup chopped fresh parsley
freshly ground black pepper
1 tbsp toasted pine nuts
Method :
Scrub
potatoes if necessary and steam or microwave until tender. While
potatoes are still hot, cut each into halves (if small) or quarters
and sprinkle with lemon juice. Combine yoghurt, garlic, basil,
parsley and plenty of black pepper. Add to warm potatoes and toss
gently. Cool, refrigerate. Just before serving, sprinkle with
toasted pine nuts. Serve with whole meal bread and a salad made from
different types of lettuce, watercress and baby spinach leaves. Add
some cherry tomatoes or baby beetroot, if desired.
