Recipe : Trout with Parmesan and Basil Dressing
Ingredients :
4 tbsp olive oil, plus extra for brushing
4 x 200g / 7 oz trout fillets
large handful of basil leaves, roughly chopped
1 garlic clove, chopped
125g / 4 oz Parmesan cheese, freshly grated
salt and pepper
Method :
Lightly brush a baking sheet with oil and place under a preheated
very hot grill to heat up. Put the trout fillets on to the hot tray,
sprinkle with salt and pepper and place under the grill for 5
minutes. Put the basil and garlic into a bowl. Work in the olive oil
using a hand-held blender. Remove the fish from the grill and
sprinkle with the grated Parmesan. Return to the grill and cook for
a further 3-5 minutes until the Parmesan turns golden. Serve with
the basil sauce drizzled over the golden trout fillets.
