Recipe : Kingfish Steaks with Chermoula
Ingredients :
4 kingfish steaks
Chermoula:
small bunch fresh coriander
1 cup parsley sprigs
2 cloves garlic
1/2 cup lemon juice
2 tsp grated lemon rind
1 tsp ground cumin
1 tsp ground paprika
ground black pepper
Method :
Cook
kingfish under grill, on a barbecue or in a lightly greased
non-stick pan until flesh just flakes (do not overcook. Serve with
Chermoula.
To make
Chermoula: While fish is cooking, place all ingredients in food
processor, process until well combined. Serve with fish.
Fat per serve : 2 grams.
Chermoula is a Moroccan sauce which can also be used
as a marinade for fish.
