Grilled Chicken with Thai Herbs Recipe
Recipe : Grilled Chicken with Thai Herbs
Ingredients :
500g chicken breast fillets
1 cup chopped mint (use Vietnamese mint, if
available)
1/2 bunch coriander, chopped
1 cup chopped basil
1/2 green pawpaw, thinly sliced
8 kaffir lime leaves, finely shredded
1 tsp finely sliced lemon grass
2 tsp finely chopped ginger
1 or 2 chilies, seeded and finely sliced
1 tbsp roasted peanuts, chopped
1 cup bean sprouts
Sauce
1/4 cup fresh lime juice
1 tbsp palm sugar
1.5 tbsp fish sauce
Method :
Place
chicken fillets under preheated grill for about 10 minutes, or until
just cooked. Combine mint, coriander and basil, pawpaw, lime leaves,
lemon grass, ginger, chilies, peanuts and bean sprouts in a medium
bowl; mix well. Place a mound of herb mixture on serving plate, top
with chicken and sprinkle with sauce. Garnish with strips of red
capsicum, if desired. Serve chicken immediately with steamed rice,
stir-fried snow peas or green beans (use 1 tsp sesame oil to
stir-fry enough for four serves). Garnish with capsicum strips, if
needed.
To make
sauce: Combine all ingredients in a small bowl.
Fat per serve for chicken dish : 6 grams.
If adding stir-fried snow peas and rice, total fat
content is 7 grams
