Beef Kebabs with Tomato Salsa Recipe
Recipe : Beef Kebabs with Tomato Salsa
Ingredients :
1 cup burghul
1 cup boiling water
400g lean minced beef
1 cup chopped mint
1/2 cup chopped parsley
1 tsp ground cumin
8 wooden skewers
Tomato Salsa:
1 large ripe tomato, finely chopped
1 red onion, finely chopped
2 tbsp chopped fresh coriander
2-3 tbsp lemon juice
1 tsp sugar
2 tsp grated lemon rind
Method :
Place
burghul in pan, pour boiling water over, cover tightly. Leave for 15
minutes (all water should be absorbed). Place beef burghul, mint,
parsley and cumin in processor; process until well mixed. Divide
mixture into eight portions, mould each around a skewer. Refrigerate
for at least 30 minutes. Grill kebabs on a barbecue or under a
preheated grill. Serve hot with salsa, salad and bread.
To make
tomato salsa: Combine all ingredients in a bowl. Mix well. Cover and
refrigerate until needed.
Fat per serve : 5 grams
Hint: Some supermarkets sell very lean minced beef
(often marked 95% fat-free). Or buy lean topside or rump steak, cut
off all fat and mince in food processor
