Sweet and Sour Turkey Meatballs Recipe

These easy to prepare turkey meatballs are served with a highly flavored sweet and sour sauce.


Recipe : Sweet and Sour Turkey Meatballs

Ingredients :

1 small onion, finely chopped

30ml / 2 tbsp olive oil

450g / 1 lb raw turkey

1 clove garlic, peeled and crushed

30ml / 2 tbsp fresh parsley, chopped

30ml / 2 tbsp blanched almonds, finely chopped

freshly ground black pepper

1.25ml / 1/4 tsp mixed spice

15ml / 1 tbsp chopped raisins

30ml / 2 tbsp fresh wholemeal breadcrumbs

1 egg, beaten

4 spring onions, thinly sliced

280ml / 1/2 pint pure tomato juice

30ml / 2 tbsp tomato puree

juice of half a lemon

15ml / 1 tbsp honey

1 green chili, seeded and thinly sliced

2 slices fresh pineapple, finely chopped

1 medium-sized red pepper, seeded and cut into thin strips

2 carrots, peeled and coarsely grated

Method :

Fry the onions gently in the olive oil until they are just transparent. Using a food processor or mincer, finely chop or mince the raw turkey. Put the minced turkey into a large bowl, along with the garlic, parsley, almonds, pepper, mixed spice, raisins, breadcrumbs and egg. Stir in the cooked onion and the oil, mixing well to combine all ingredients thoroughly. Put all the remaining ingredients into a shallow pan and bring to the boil. Cover the pan and simmer the sauce gently for 10 minutes, stirring occasionally. Carefully drop the chilled meatballs into the sauce. Recover and simmer for a further 20 minutes, or until the meatballs are completely cooked.

Serving idea - Serve with brown rice or wholemeal pasta.

Preparation - If the sauce evaporates too quickly, add a little stock or water to keep it to a thin enough consistency.

Cook's tip - The shaped meatballs can be lightly fried in a little oil before being added to the sauce, if preferred.
