Five Spiced Pork Recipe
Five spice
is a ready-prepared spicy powder which can easily be obtained from
delicatessens or ethnic supermarkets. It is used in this dish with
ginger and pepper to make a typical Szexhwan meal.
Recipe : Five Spiced Pork
Ingredients :
450g / 1 lb fillet pork
60ml / 4 tbsp sesame oil
one 2.5cm / 1-inch piece fresh ginger, peeled and
chopped
5ml / 1 tsp black peppercorns
5ml / 1 tsp five spice powder
75ml / 5 tbsp dry sherry
140ml / 1/4 pint light stock
30ml / 2 tbsp honey
4 spring onions, cut into diagonal slices
60g / 2 oz bamboo shoots, shredded
1 large ripe mango, peeled and flesh sliced
Method :
Using a
sharp knife, finely slice the pork fillets into thin strips. Put the
oil into a wok or large frying pan, and heat gently. Add the ginger
and stir this into the oil. Fry quickly for 20-30 seconds. Add the
sliced meat to the wok and stir-fry for 4-5 minutes, or until the
meat is well cooked and tender. Stir the peppercorns, five spice
powder, sherry, stock and honey into the meat. Mix well and bring to
the boil. Add all the remaining ingredients to the wok and cook
quickly, stirring all the time for a further 3 minutes. Serve
immediately.
Serving
idea - Serve with rice or Chinese noodles.
Variation - Use chicken instead of pork in this recipe.
