Sweet Potato, Pumpkin and Orange Soup Recipe


Recipe : Sweet Potato, Pumpkin and Orange Soup

Ingredients :

1 onion, chopped

1 clove garlic, crushed

1 sprig fresh rosemary

750g peeled and seeded pumpkin chunks

500g orange sweet potato, peeled and cut into chunks

3 cups chicken stock

1 cup orange juice

Method :

Combine all ingredients in a large pan; bring to the boil, cover and simmer for 15-20 minutes, or until vegetables are tender. Remove rosemary sprig and discard. Puree soup in small batches in a food processor or blender. To serve, return soup to pan and reheat. Ladle into bowls and sprinkle with freshly ground black pepper.

Fat per serve : 1 gram

Note : This soup is good served with toasted focaccia bread. Add 3 grams of fat for each average-sized piece.

Hint : Take care not to over-fill the food processor or blender when pureeing hot soup. Process in batches to prevent scalding hot liquid overflowing onto hands or bench.
