Potato, Pumpkin and Orange Soup
Ingredients :
450g raw king prawns in the shell
4 cups chicken stock or water
3 lemon grass stalks, bruised
10 kaffir lime leaves, torn in half
225g straw mushrooms, drained
45ml Thai fish sauce
50ml lime juice
15ml fresh coriander leaves
4 red chilies, seeded and chopped
2 spring onions, finely chopped
Method :
Peel and devein the prawns and set aside. Rinse the shells, place in
a large pan with the stock or water and bring to the boil. Add the
lemon grass stalks and half the lime leaves. Simmer for 5-6 minutes
until the stalks change color and the stock is fragrant.
Strain, return to the pan and reheat. Add the mushrooms and prawns,
then cook until the prawns turn pink. Stir in the remaining
ingredients. Taste and adjust the seasoning; it should be sour,
salty, spicy and hot. Serve the soup in warmed bowls.
A classic Thai seafood soup with a generous helping of chilies.
Serves 4-6
