Recipe : Garden Pasta Soup
Ingredients :
100g onions, diced
100g potatoes, diced
100g carrots, diced
100g tomatoes, diced and deseeded
100g zucchini, diced
100g white haricot beans
50g Buitoni Macaroni
2 tbsp (dry weight) dried parsley
1 tbsp freshly ground black pepper

4 tbsp olive oil
3 bay leaves
3 pips garlic, crushed
5g fresh oregano

1.5 litre water
200ml tomato ketchup
3 tbsp concentrated chicken stock
Method :
Saute
ingredients A and onions in olive oil till the onions turn soft. Add
carrots and potatoes. Fry for another 3 minutes. Pour in ingredients
B and bring to boil. Let it simmer for 10 minutes or until the
potatoes are soft. Stir in the rest of the vegetables, macaroni,
dried parsley and black pepper. Cook for another 3-4 minutes.
Serves 4
This dish is a good source of fibre
