Pilau with Onions and Almonds Recipe


Recipe : Pilau with Onions and Almonds

Ingredients :

1 tbsp olive oil

2 medium onions, thinly sliced

1 cup rice, brown or white

2 tbsp raisins

2 cups water

1 tbsp slivered almonds

1/2 cup chopped fresh coriander

2 tbsp chopped fresh chives or oregano

salt and pepper, to taste

Method :

Heat oil in a large heavy-based pan and cook onion, covered, over low heat, stirring occasionally, for 20 minutes. Add rice and raisins, stir for 2-3 minutes. Add water and bring to boil; cover, turn heat to low and cook for 20 minutes (for white rice) or 30-40 minutes (for brown rice). While rice is cooking, roast almonds; spread in a dry frying pan and place over low heat until nuts have turned golden brown. Set aside. When rice is cooked, add the almonds, coriander, and chives or oregano; toss lightly to combine. Season to serve, garnish with oregano, if desired.
