Herbed Bread Recipe
Recipe : Herbed Bread
Ingredients :
7g sachet dried yeast
1 tsp sugar
1.25 cups lukewarm water
4-5 sun dried tomatoes
3 cups plain flour
pinch salt
1 red capsicum, seeded and finely chopped
2 tsp dried rosemary leaves
2 tsp dried oregano leaves
2 tbsp fresh chopped chives
2 tsp olive oil
Method :
Brush an
oven tray lightly with oil. Combine yeast and sugar and add a little
of the water. Mix well. Add remaining water. Leave in warm place for
about 5 minutes until frothy. Soak tomatoes in boiling water 5-10
minutes or until soft. Drain, chop finely. Sift flour and salt into
a large bowl, make a well in centre. Add yeast mixture, mix to form
a soft dough. Add more flour if needed.
Turn dough
onto a lightly floured surface and knead for about 10 minutes or
until it feels springy. Place into an oiled bowl, cover and leave in
a warm place for about an hour, or until doubled in size. Punch
dough down and knead 2-3 minutes. Push dough out flat and sprinkle
with capsicum, dried tomato and herbs. Roll up and then continue
kneading until flavorings are well incorporated. Pat dough into a
circle about 23cm in diameter, place on prepared tray, brush with
olive oil and score top of dough, if desired. Leave to rise for
another 30 minutes.
Preheat
oven to 200C and bake bread for about 25 minutes. Cut into wedges
and serve warm.
