Recipe : Pear Almond Crispy Roll
Ingredients :
3 sheets filo pastries
40g unsalted butter, melted
Filling
180g pears (peeled and cored)
30g brown sugar
20g raisins
2 tbsp rum
30g almond flakes
2 tsp ground cinnamon
50g breadcrumbs
30g unsalted butter, melted
unsalted butter, melted - for brushing on the surface
Method :
Soak the raisins in rum for at least one hour. Preheat oven to 190C
for about 10 minutes. Dice pears and set aside. Cut 3 sheets of the
filo pastry into halves. Brush butter on each piece of filo pastry.
Stack them up and set aside.
Mix well the filling ingredients. Put
filling on the upper part of filo pastry. Roll up the pastry. Put
them on the baking rack with the open side facing down. Brush melted
butter onto the roll. Bake for 20-25 minutes until golden. Cut into
pieces and serve.
Juicy pear and crispy almonds make a perfect match in terms of taste
and texture when they are wrapped in crispy pastries crust.
