Yuletide Muffins Recipe
Recipe : Yuletide Muffins
Ingredients :
1 3/4 cups white self-raising flour
1 cup wholemeal self-raising flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp mixed spice
1/4 tsp ground cloves
250g mixed fruit (raisins, sultanas, currants)
2 tbsp mixed peel
1/2 cup sweet sherry
1/2 cup glace cherries, cut in quarters
1 cup apple sauce
1/4 cup apple juice concentrate
2 tbsp golden syrup
2 egg whites (or 2 tsp egg replacer powder)
1/4 cup orange juice
Method :
Soak the dried fruit and mixed peel overnight in the sherry. Preheat
oven to 180C. Lightly spray 1 1/2 muffin trays (large size) with
vegetable oil spray.
Sift
flours, baking powder and spices together in a large bowl. In a
blender, or another bowl, mix the apple sauce, apple concentrate,
golden syrup, egg whites and orange juice until smooth.
Stir the
liquid mixture into the flours. Combine well. Fold in the dried
fruit/sherry mixture and then the glace cherries. Pour into muffin
trays (makes 18) and bake for 20-25 minutes or until just golden
brown. Cool in trays.
