Tropical Dried Fruit Muffins Recipe
Recipe : Tropical Dried Fruit Muffins
Ingredients :
1/2 cup pineapple juice
100g dried pineapple pieces
100g dried pawpaw
100g dried mango slices, chopped
1 1/2 cups white self-raising flour
1 1/4 cups wholemeal self-raising flour
2 tsp baking powder
1/4 cup Splenda artificial sweetener powder
2 very ripe bananas
1 cup canned unsweetened peach slices in juice,
drained - reserve juice
1/2 cup skim milk
1/4 cup reserved peach juice (from can)
2 egg whites
1/4 cup apple sauce
Method :
Soak dried fruits in pineapple juice for 30 minutes (reserve 18
pieces for decoration). Preheat oven to 180C. Lightly spray 1 1/2
muffin trays (large size) with vegetable oil spray.
Sift flours and baking powder together into a large bowl. Add
artificial sweetener. Place all other ingredients except peaches
into a blender and mix well.
Add liquid mixture to flour mixture and stir well to combine. Fold
in the peaches and dried fruit mixture. Spoon into muffin trays
(makes 18). Decorate with remaining dried fruit pieces and bake for
20-25 minutes.
