Pumpkin and Raisin Muffins Recipe
Recipe : Pumpkin and Raisin Muffins
Ingredients :
2 1/2 cups white self-raising flour
1/4 cup unprocessed bran
2 tsp baking powder
1 cup mashed pumpkin
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/4 cup brown sugar
3/4 cup skim milk
2 egg whites (or 2 tsp egg replacer powder)
1/2 cup apple sauce
1/2 tsp vanilla essence
1 cup raisins
Method :
Preheat oven to 180C. Lightly spray 1 1/2 muffin trays (large size)
with vegetable oil spray. Sift the flour, baking powder and the
spices into a large bowl. Stir in the bran, sugar and raisins.
In a
blender, mix the pumpkin and all of the other ingredients until well
combined. Pour liquid mixture into flour mixture and stir well.
Spoon into
muffin trays (makes 18) and bake fore 20-25 minutes (test with a
skewer to see if muffins are cooked - skewer should come out clean).
Cool for 5 minutes and then turn out onto a wire rack.
