Choc-Chip Muffins Recipe


Recipe : Choc-Chip Muffins

Ingredients :

2 1/2 cups white self-raising flour

2 tbsp cocoa

1 tbsp drinking chocolate

1/2 cup Splenda artificial sweetener powder

2 tsp baking powder

1 cup skim milk

1/4 cup chocolate syrup topping

2 large egg whites or equivalent egg replacer powder

1 tbsp Kahlua/Creme de Cacao

100g low fat vanilla yoghurt

1 tbsp corn syrup

4 tbsp (80g) dark choc bits

Method :

Preheat oven to 180C and lightly spray 1 1/2 (large size) muffin trays with vegetable oil spray.

Sift flour, cocoa, drinking chocolate, artificial sweetener and baking powder into a large bowl. Repeat this sifting 2 more times.

Place all other ingredients, except for the choc bits, into a blender or mixing bowl and beat until smooth and well mixed. Stir the liquid mixture into the dry ingredients and mix well. Fold in the choc bits.

Spoon mixture into muffin trays (make 18) and bake for 15-18 minutes or until muffins just spring back when touched lightly.

Do not OVERCOOK - Allow to cool in trays and remove when cold.

Makes 18 large muffins

Yum! Yum! Yum! These will satisfy your chocolate cravings and at less than 2g fat each. (Don't nibble on the choc chips while you are cooking the muffins!)
