Black Forest Muffins Recipe
Recipe : Black Forest Muffins
Ingredients :
2 1/2 cups white self-raising flour
2 tsp baking powder
2 tbsp cocoa
1/2 cup Splenda artificial sweetener powder
1 x 425g can stoneless black cherries, drained,
liquid reserved
1/2 cup liquid, from cherries
1/2 cup skim milk
100g light mixed berry or vanilla Fruche
4 tbsp blackcurrant or cherry jam
2 egg whites (or egg replacer powder)
1 tbsp cherry liqueur
1 tbsp corn syrup
Method :
Preheat
oven to 180C and lightly spray 2 large size muffin trays with
vegetable oil spray. Sift the flour, baking powder and cocoa
together into a large bowl. Stir in the artificial sweetener.
Place all
of the other ingredients, except the cherries, into a blender and
mix well. Pour the liquid ingredients into the dry ingredients and
stir well. Lastly, fold the cherries into the mixture gently.
Spoon into
the muffin trays (makes 18) and bake for approximately 20 minutes or
until muffins just spring back when lightly touched. Allow to cool
for 5 minutes before removing from trays and placing on a wire rack.
