Mandarin and Liqueur Custard Flan Recipe
Recipe : Mandarin and Liqueur Custard Flan
Ingredients :
Sponge -
1 egg
3 egg whites
1/2 cup castor sugar
100g white plain flour
Filling -
2 tbsp custard powder
1 cup skim milk
1/4 cup boiling water
1 tsp agar powder or gelatin
100g low fat vanilla yoghurt
2 tbsp icing sugar
3 tbsp grated orange rind
3 tbsp Cointreau
1 tbsp orange juice
2 x 310g cans mandarin segments, drained
Method :
Preheat oven to 180C. Spray a 23cm
fluted (loose base) flan tin lightly with vegetable oil spray.
Sponge -
Put the
egg, egg whites and 1/2 cup castor sugar in a large bowl and beat
with an electric mixer for 8 minutes until mixture is thick and
creamy. Sift the flour into the egg and using a large metal spoon,
fold in gently.
Pour
mixture into the prepared tin and spread evenly. Bake for 20-25
minutes until just springy to the touch and very lightly browned.
Turn out onto a wire rack to cool.
Filling -
Stir the
custard powder into a little of the milk until well mixed with no
lumps. Gradually add the rest of the milk. Bring custard to the
boil, stirring constantly. Remove from heat.
Working
quickly, dissolve the agar or gelatin in the boiling water and stir
vigorously into the hot custard. Set custard aside, covered, to cool
slightly. In a small bowl combine the 1 tbsp orange juice with 2
tbsp of the Cointreau.
When sponge
is cool slowly drizzle the orange juice/Cointreau over it so that
the liquid is absorbed. (Work slowly or the liquid will simply run
off.) Place the yoghurt in a large bowl and beat in the icing sugar.
Add the grated orange rind and the remaining 1 tbsp of Cointreau.
Mix well.
Add the
custard, a little at a time, to the yoghurt mixture, beating well
between each addition until smooth and well combined. Place filling
mixture into refrigerator for 30 minutes or until just slightly set
and no longer runny.
Spread
filling mixture over top of sponge and arrange mandarin segments
decoratively on the top.
