Custard Tart Recipe


Recipe : Custard Tart

Ingredients :

Pastry -

1 1/2 cups white plain flour

1 1/2 tbsp custard powder

2 tbsp castor sugar

30g reduced fat margarine, chopped into pieces

1/4 cup skim milk

1/4 cup water, plus 1/2 tbsp water

1 egg white, lightly beaten

Filling -

1 egg

3 egg whites

2 tbsp castor sugar

1 1/2 tbsp custard powder

2 cups skim milk

1 tsp vanilla essence

nutmeg

Method :

Preheat oven to 200C. Lightly spray a 23cm pie plate with vegetable oil spray.

Pastry -

Sift the flour, custard powder and sugar together into a large bowl. Rub in the margarine with your fingertips until all combined, like breadcrumbs.

Gradually add the milk and water, mix with hands. Add the extra 1/2 tbsp water if necessary to make mixture cling together. (Pastry should not be too wet.)

Turn dough onto a lightly floured board and roll out to make a circle larger than the prepared pie plate. Carefully press pastry into the dish. Trim edges and decorate with a fork or teaspoon.

Brush the inside of the pastry with the lightly beaten egg white.

Filling -

Beat the egg, egg whites, custard powder, vanilla and castor sugar together until smooth. Heat the milk until it is lukewarm and then slowly add it to the egg mixture. Stir until smooth.

Place the prepared pastry base on a baking dish or tray. Gently pour the custard mixture into the pastry case and very gently lift the tray into the oven, so as not to spill the custard.

Bake for 50-55 minutes. After 20 minutes open the oven and sprinkle the custard with nutmeg. (Do not overcook. You do not have to cook the custard until it sets completely because the custard will firm as it gets cold.) Serve cold.
