Cathedral Windows Recipe


Recipe : Cathedral Windows

Ingredients :

Base -

12 Milk Arrowroot biscuits

1/2 cup cornflake crumbs

1 tbsp skim milk powder

1 tsp cinnamon

5 tbsp pineapple juice (more if necessary)

Filling -

3 sachets low joule jelly in 3 different colors

3/4 cup pineapple juice

1/2 cup sugar

2 sachets (6 tsp) gelatine or agar

1/4 cup boiling water

3/4 cup Carnation Light evaporated milk

1/4 cup sweetened condensed skim milk

1/4 cup light vanilla Fruche

Method :

Base -

Crush biscuits in a food processor. Place crushed biscuits, cornflake crumbs, milk powder and cinnamon in a bowl and mix well. Gradually add the pineapple juice and mix with a fork until combined. Press mixture together with hands into the shape of a ball and place between 2 sheets of greaseproof paper.

Press down with hands to flatten and then roll out with a rolling pin to form a circle to fit a 23cm pie dish. Peel off top sheet of paper and place biscuit base over dish. Remove second sheet of paper and gently press base into dish. Trim edges and chill in refrigerator while preparing filling.

Filling -

Prepare jellies the day before using only 1 cup of water for each one instead of 2. Use square or rectangular shaped containers. Place pineapple juice and sugar in a a saucepan and bring to the boil. Remove from heat.

Dissolve the gelatine in the boiling water (use a large bowl). Stir until all dissolved. Add the hot pineapple mixture to the gelatine and stir well. Allow to cool to room temperature. Beat milks and Fruche together until frothy and add to the pineapple mixture. Stir well.

Cut the jellies into small cubes (1cm) and fold those cubes into the milk and pineapple mixture. Pour into prepared base and refrigerate. (This will take about 2 hours to set).
