Chocolate Mint Kisses Recipe
Recipe : Chocolate Mint Kisses
Ingredients :
cocoa for dusting
30g dark chocolate
5 egg whites
1/2 cup castor sugar
1/2 cup Splenda artificial sweetener powder
1 tsp vanilla essence
1/4 tsp peppermint essence
1 tbsp cocoa
Method :
Preheat
oven to 150C. Spray 2 non-stick baking sheets with vegetable oil
spray and then sprinkle with sifted cocoa. Melt the chocolate using
a double boiler or low heat in the microwave. Set aside to cool.
Beat the
egg whites for 5-6 minutes or until soft peaks form and hold their
shape. Add the castor sugar and artificial sweetener, alternately, a
little at a time. Beat until the mixture is stiff and shiny. Using a
metal spoon, gently fold in the 1 tbsp cocoa, melted chocolate and
the essences. Fold until combined.
Drop heaped
teaspoonful onto a baking sheet, about 3 cm apart. (only prepare one
baking sheet at a time). Bake for 40 minutes. Remove from baking
trays immediately and place biscuits on a wire rack to cool
completely. Store in an airtight container.
