Vanilla Angel Cake Recipe
Recipe : Vanilla Angel Cake
Ingredients :
Cake -
1 cup white self-raising flour
1/4 cup icing sugar
1/2 cup Splenda artificial sweetener powder
10 large egg whites
1 1/2 tsp cream of tartar
1/2 tsp vanilla essence
1/2 tsp almond essence
3/4 cup castor sugar
Icing -
150g icing sugar
2-3 tbsp orange juice
2 tbsp grated orange peel
Method :
Preheat the
oven to 190C. You will need a large ungreased tube cake tin for this
cake. (The cake has to stick to the sides of the tin). Sift the
flour, icing sugar and artificial sweetener into a mixing bowl.
Repeat the sifting process.
Beat the
egg whites and the cream of tartar until the egg whites are stiff
enough to form peaks (this will take about 10 minutes). Add the
essences and beat for a further 1 minute. Add the castor sugar to
the beaten egg whites, 1 tbsp at a time.
Sift the
flour mixture over the egg mixture, 1/4 at a time. Fold in gently.
(Do not over stir the mixture - only fold until the flour disappears
into the egg white). Spoon mixture into the ungreased tube tin. Run
a knife through the batter to get rid of any large air bubbles. Bake
the cake for approximately 40 minutes or until the cake springs back
when lightly touched with your fingertip.
Invert the
tin to cool the cake. Try to rest the upside down cake on 2 other
cake tins so it is suspended. Alternatively, place the cake upside
down on a wire rack (the cake will tend to stick to the rack) for 2
hours or until completely cold.
Run a knife
around the sides of the cake to east it from the tin. Tap the bottom
of the tin and knock the cake out onto a plate. (The cake may prove
difficult to remove from the tin. Just keep repeating the process
with the knife and tapping the bottom of the tin.)
Icing -
Sift the
icing sugar into a bowl and beat in just enough of the orange juice
to make the icing spreadable. Spread icing over top of the cake
letting it run down the sides and centre of the cake. Sprinkle the
grated rind over the top.
