Sweet Pumpkin Loaf Recipe
Recipe : Sweet Pumpkin Loaf
Ingredients :
1 cup white plain flour
1/2 cp white self-raising flour
1 tsp baking powder
1 tsp bicarbonate soda
1 tsp mixed spice
1/2 cup Splenda artificial sweetener powder
1/4 tsp salt
3/4 cup cooked, mashed pumpkin
1/2 cup
prune puree
1/2 cup brown sugar (80g) (loosely packed)
1/2 cup egg whites (4 large eggs)
1/3 cup skim milk
100g fresh dates, chopped
Method :
Preheat oven to 180C. Spray a 23cm x 13cm loaf tin with vegetable
oil spray. In a large bowl beat the mashed pumpkin and prune puree
until reasonably smooth. Gradually add the brown sugar and mix well.
Set aside.
Sift the
first 7 ingredients together in a medium bowl. Set aside. Whisk the
egg whites or egg replacer/water mixture until frothy. Stir into
pumpkin mixture.
Add milk to
the pumpkin mixture a little at a time, alternating with the sifted
dry ingredients. Mix until just combined and then stir in the
chopped dates.
Pour into
prepared loaf tin and bake for 50 minutes. (Test with skewer in
centre to ensure loaf is cooked - skewer should come out clean.)
Cool in pan for 10 minutes and then remove and place on rack to cool
completely.
