Recipe : Quick n Easy Apricot and Coconut Cake
Ingredients :
200g dried apricots, cut in quarters
1 cup white self-raising flour
1/2 cup raw sugar
1/4 cup Splenda artificial sweetener powder
1/4 cup dessicated coconut
7/8 cup skim milk
Method :
Preheat oven to 180C. Lightly spray a 21cm round or 23cm x 13cm loaf
tin with vegetable oil spray. Place apricots, sugar, sweetener and
coconut in a medium size bowl.
Sift the
flour over the top of the dry ingredients. Stir to combine. Add the
milk and fold in gently.
Pour into
prepared loaf tin and bake for 35-40 minutes or until lightly
browned on top.
