Moist Fruity Loaf Recipe
Recipe : Moist Fruity Loaf
Ingredients :
200g dried apricots
100g dried pears
100g dried figs
100g pitted prunes
50g dried apples
2 cups water
2 bananas
1 cup apple sauce
1 tbsp lemon juice
1 cup wholemeal self-raising flour
1 tbsp mixed peel
1/2 tsp mixed spice
1/2 tsp cinnamon
Method :
Preheat the oven to 190C and lightly spray a 23cm x 13cm loaf tin
with vegetable oil spray. Place water and all of the dried fruits in
a large saucepan. Bring to the boil and cook until fruit is soft.
Mash the boiled fruit until it is mushy, using a knife and fork.
Allow to cool to room temperature.
In a
blender place the bananas, apple sauce and lemon juice. Mix until
combined. Add banana mixture to mashed fruit mixture and mix well.
Add remaining dry ingredients to fruit mixture and fold until
combined.
Pour into
prepared loaf tin and bake for 40-45 minutes. (Test with skewer to
see if cooked. Skewer should come out dry.) Cool in tin for 15
minutes before removing.
