Banana and Walnut Cake Recipe
Recipe : Banana and Walnut Cake
Ingredients :
500g ripe bananas (4-5 bananas) peeled, mashed with a
fork
1/4 cup honey
1/4 cup Carnation Light evaporated milk
1/4 cup golden syrup
2 egg whites
1 cup wholemeal self-raising flour
1 cup white self-raising flour
1 tsp baking powder
1 tsp cinnamon
1/2 cup Splenda artificial sweetener powder
1/4 cup unprocessed bran
1 cup sultanas
45g coarsely chopped walnuts (reserve 1 tbsp for
decoration)
Method :
Preheat
oven to 190C and lightly spray a deep 23cm x 13cm loaf tin with
vegetable oil spray. In a large bowl, sift the flours, baking
powder, cinnamon and artificial sweetener together. Fold in the
bran.
Using a
blender or hand mixer, beat together the honey, milk, golden syrup
and egg whites. Add this mixture to the sifted flour mixture and
stir well. Fold in the mashed bananas, sultanas and lastly the
chopped walnuts.
Spoon the
mixture into the prepared loaf tin and sprinkle the remaining 1 tbsp
of nuts over the top of the loaf. Bake for 55-60 minutes (test with
a skewer - it should come out clean). Cut cold cake into 20 slices.
