Mocha Rum Truffles Recipe
Recipe : Mocha Rum Truffles
Ingredients :
200g chocolate flavored biscuits, eg Scalliwag
1 1/2 cups Coco Pops
150g raisins
2 tbsp cocoa
1 tbsp rum
1 tbsp Kahlua liqueur
2 tbsp instant coffee
1 cup sweetened condensed skim milk
1/2 cup chocolate "hail" cake decoration
Method :
Soak raisins in the Kahlua and rum for 30 minutes. Crush the
biscuits and the Coco Pops with a rolling pin. (Don't use a food
processor as the crumbs will be too fine and powdery).
Put the crushed biscuits, Coco Pops, cocoa and coffee into a large
bowl. Stir in the soaked raisins (including the liquid). Mix well.
Add the condensed milk and stir well until mixture is thoroughly
combined.
Roll the mixture into small balls and roll each ball in the
chocolate cake decoration.
Tip - rinse your hands in warm water every now and then to stop the
mixture sticking to them.
