Chocolate Rum and Coconut Sticks Recipe
Recipe : Chocolate Rum and Coconut Sticks
Ingredients :
4 tbsp golden syrup
30g reduced fat butter/margarine, softened
2 tbsp brown sugar
1 tsp rum
1 tsp coconut essence
150g white plain flour
2 tbsp cocoa
50g dark chocolate bits
Method :
Cream the
golden syrup, butter, brown sugar, rum and coconut essence until
smooth. Stir in the cocoa and then the flour. Mix until well
combine. Wrap the dough in plastic food wrap and refrigerate it for
30 minutes.
Preheat the
oven to 200C and lightly spray 2 baking sheets with vegetable oil
spray. Place the chilled dough on a lightly floured board. Divide
the dough in half. Roll out to about 3mm thick and cut dough into
1.5 cm wide strips. Roll strips with your hands to form long sausage
shapes.
Cut into
10cm long "sausages", flatten slightly and place on baking trays.
Repeat process with the remaining dough until you have 48 sticks.
Bake for 8 minutes and then allow to cool on trays.
Melt the
chocolate in a small deep container, and when the chocolate sticks
are cool dip the end of each one in the melted chocolate.
Refrigerate to set the chocolate.

These chocolate dipped chocolate treats will be
devoured in the twinkle of an eye. Dress them up like to serve after
dinner with coffee. They are my favorites !
