Apricot and Ginger Snowballs Recipe
Recipe : Apricot and Ginger Snowballs
Ingredients :
5 breakfast wheat biscuits or 150g wheat flake
cereals (Weetbix, Vitabrits etc)
1 x 250g packet ginger snap biscuits, crushed with a
rolling pin
100g dried apricots, finely chopped
100g crystallized ginger, finely chopped
100g sultanas
1 x 415g can and 1/4 cup sweetened, condensed skim
milk
2 tbsp mixed peel
1/2 tsp ground ginger
1/4 tsp ground nutmeg
45g desiccated coconut
Method :
Crush the wheat biscuits or cereal and mix with the crushed ginger
biscuits in a large bowl.
Stir in a dry ingredients, except the coconut. Mix well. Add
condensed milk and fold in until mixture is just moist.
Roll the mixture into 60 small balls with your hands (each should be
approx. 2cm in diameter). Roll each ball in coconut.
