Honey Rhubarb with Yoghurt Recipe
Recipe : Honey Rhubarb with Yoghurt
Ingredients :
500g non-fat natural yoghurt
1 tsp vanilla essence
1 tsp finely grated orange rind
1 bunch rhubarb, washed and cut into 3cm lengths
1/2 cup orange juice
2 tbsp honey
1 cinnamon stick
6 whole cloves
1 tsp sugar
1 tsp ground cinnamon
Method :
Place
yoghurt in medium bowl, add essence and rind and stir. Line a
strainer with a piece of clean muslin (or a new Chux-style cloth)
and pour in yoghurt. Leave to drain over a basin for at least 2
hours, preferably in the refrigerator. Place rhubarb in a pan with
juice, honey, cinnamon stick and cloves. Bring to the boil, cover
and simmer over very low heat for 8 minutes. Remove from heat and
leave to cool. Remove cinnamon stick and cloves and refrigerate
rhubarb.
Combine
sugar and ground cinnamon in a small bowl. Serve rhubarb topped with
a dollop of drained yoghurt and sprinkled with sugar and cinnamon
mixture. Serve chilled for best results. May be served hot in cold
weather.
