Recipe : Honey Fig Crispy Cup
Ingredients :
4 figs
3 sheets filo pastry
40g unsalted butter, melted
Filling
100g mascarpone cheese
2 tbsp honey
1 tbsp apricot jam
1 tsp lemon juice
60ml whipping cream
honey for brushing on the surface
Method :
Preheat oven to 180C for about 10 minutes.
Flatten the filo pastry on the table. Brush butter on each sheet.
Cut them into 5" x 5" squares. Stack 4 square pastry sheets
randomly. Brush butter on each sheet. Press into a muffin tin.
Repeat this step to make 3 more pastry cups.
Bake them in the oven
for about 8-12 minutes until golden. Leave them to cool. Beat the
whipping cream until it stands. Set aside. Beat the mascarpone,
honey, apricot jam and lemon juice until smooth.
Stir in the whipped
cream. Divide this filling among all pastry cups. Slice figs and put
them onto the cheese filling. Brush honey on top. Serve immediately.
With a light natural fruity scent, figs make graceful desserts when
placed in a crispy cup together with honey, apricot jam and
mascarpone.
